Winemaking | Hand picking of the best Cabernet Sauvignon bunches was done in the morning, and immediately followed by processing with an emphasis on additional selection of berries. After silting and settling, the green beans were fermented in stainless steel tanks under controlled conditions. Fermentation was followed by malolactic fermentation, and after its completion, the wine was poured into barrique barrels for maturation. After 18 months, the wine was poured into a stainless steel tank where it matured for an additional 6 months, and then bottled with minimal filtration, where it was aged for another 8 months before being released on the market. |
