| Winemaking | The grape were hand-picked in the early morning hours , after which whole clusters were pressed and juice naturally sedimented 24 hours . Clear must have been inoculated with selected yeasts and fermentation was controlled at low temperatures . Upon completion of the fermentation the wine was separated from coarse sediment and occurred maturing on fine lees stirring occasionally . After clarification and filtration the wine is bottled . |
