|Hand- harvested grape was further selected in the cellar after that cooled and pressed . The must is cooled and clarifided overnight . What followed was cold fermentation under controlled conditions . Upon completion of the fermentation and decantation from coarse sediment , the wine is aged on fine lees six months , stirring occasionally . The best tanks were selected by careful tasting and are in the final blend.After clarification and filtration, the wine is filled into bottles , and after two additional months of aging placed on the market .
