Winemaking | Hand-harvested grapes are transported to the winery as soon as possible and processed in fermenters where they ferment at 26°C. After complete fermentation and maceration, the lees are poured into stainless steel tanks where spontaneous malolactic fermentation continues. After natural clarification, the wine is separated from the lees and poured into barrique barrels where it matures for 24 months. The bottled wine matures for another 4 months in the bottle before being put on sale. |
